Chicken Pot Pie
Ingredients
- 1/3 cup butter
- 1/3 cup flour (I use Wondra)
- Onion salt and Garlic salt to taste
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 3/4 cups chicken broth
- 2/3 cup heavy cream
- 2 cups cut up cooked chicken
- 1 package frozen mixed vegetables (Use any combo you like. I use carrots, peas and corn.)
- 2 pie crusts. ( I use the ones from the refrigerated section.)
Directions
In large saucepan: Heat butter over low heat until melted.
Blend in flour, salts and pepper.
Cook over low heat, stirring constantly until smooth and bubbly.
Stir in cream. Stir constantly. It will thicken up some. Stir in broth.
Heat to boiling; stirring constantly. Boil and stir one minute.
Stir in chicken and veggies. Put one crust into casserole dish.
Pour in chicken mixture. Top with other crust. Cut slits in center to vent.
Make the edges look as nice as you want.
Cook at 375 degrees for 25-30 minutes.
I got this recipe years ago from the Betty Crocker Cookbook. (It has an orange cover). This has been a favorite of everyone for years. I usually use two sets of pie crusts and double the ingredients too. You will thoroughly enjoy this.

This is the recipe I use, probably from the same cookbook! It is delish. I've never thought of putting it in a 9x13, that's a good idea.
