Let It Snow....(As in Snowball Cookies!!!)

 Last week I heard that 49 out of the 50 states had at least some snow, somewhere.  This week looks like it could be much of the same.
 With that in mind, how about making some snowball cookies to munch on while you are stuck inside?  There are so many variations of the snowball cookie.  Many are also called Mexican Wedding cookies.  There is the traditional almond flavored snowballs, lemon, chocolate mini chip, coconut, and even chocolate.  My recipe is just a basic snowball recipe.  Doctor it up any way you see fit!

Ingredients:

1 cup butter or margarine

1/2 cup powdered sugar, sifted

1 1/2 teaspoon almond flavoring

2-1/2 cups flour, sifted

1/4 teaspoon salt

3/4 cup pecans, chopped as fine as possible
Granulated sugar

Preheat oven to 350 degrees F. Cream butter in large bowl. Add sugar, cream until light. Stir in vanilla. Mix in flour and salt. Stir in nuts. Shape into balls. Place on ungreased cookie sheet and bake in preheated oven for 15 minutes. Roll in granulated sugar then in additional powdered sugar straight out of oven. Roll again in powdered sugar when cool.

    I made some snowballs last week and I love how they melt in your mouth. What a fun idea to stack them and make them into snowmen. I did that with donuts this year. Next year maybe with snowballs. Joni
