Chicken Fried Steak......

(If you are reading this and you live in Oklahoma, well you have my permission to go visit some other blog.  I'm sure you can make this with your eyes shut!!)

Today's post is Chicken Fried Steak.  A comfort food.  A staple in the south.  Easy to make.  Delicious to eat!

  The above picture is of the steaks frying up in the pan.  The following is how you do it:

 Start with the meat. I used Sirloin Tip steaks that had been tenderized by the butcher.  I have also used Round Steak.  If you do not buy it tenderized you can tenderize it at home with a meat cleaver.  I'm sure it is a great way to get your frustrations out.....
You also need a milk/egg 'bath' and a bowl of flour. The milk/egg bath is simply one egg beaten, pour some milk in the bowl, mix the two together.  If you are doing a lot of steak, then add another egg and more milk. We're simple like that!                                                                  Get ready to get your hands dirty.  Your stomach will thank your hands later!  Take your steak and dip it into the milk/egg bath.  Be sure your steak takes a good bath!


 After the milk/egg bath, put the meat into the flour and make sure it is coated with flour.  I believe the correct term is 'dredge' it in flour.  I like to make sure the flour is thickly coated.  This is the step where your fingers will get gooey.  It's a small price to pay for the final product!


In the meantime prepare your skillet.  Cover the bottom of a large skillet with liquid vegetable oil.  You can also use Crisco.  If you use Crisco let it heat up until it is melted. When your oil is heated up, put the meat into the skillet.  (Be careful as you put the meat in the oil, so that you don't get splattered with grease).  I try to turn the meat as few times as possible so that I will not break apart the breading that is cooking on the meat.  I also doctor the steaks up with garlic salt, onion salt, and pepper.  That is all to your own personal taste.


Notice I have potatoes boiling in the background.  Be sure you do that as well.  If you are having Chicken Fried Steak, then you must have Mashed Potatoes and Gravy too!  
When the steaks are done all the way through, you should have crispy, breaded  steaks that look like this.


  This is what they look like right before I took them out.   Too bad we don't have Smellablog.  You would love me right now.


  THIS is what it looks like on a plate!  Notice the mashed potatoes and gravy and the gravy on the meat as well.  I didn't ever say this was a healthy meal, just an Oklahoma staple! We'll count the corn on the cob (smothered in real butter) as our vegetable!
