Strawberry Fields (and Dessert) Forever!

 Really,
is there a
better
springtime ritual
than fresh strawberries?



One of my favorite desserts to make
includes strawberries....
although they are frozen.
But since I was talking about strawberries today
I decided it was a perfect day
to include a
perfect dessert.
It has been a family favorite for over 30 years.

 FROZEN STRAWBERRY DESSERT
 Ingredients:


1 cup all-purpose flour

1/4 cup packed brown sugar

1/2 cup cold butter

1/2 cup chopped pecans


2 cups frozen unsweetened strawberries, thawed

1 cup sugar

1 teaspoon lemon juice

1 cup heavy whipping cream, whipped


Directions:


In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Stir in pecans. Spread out on a baking sheet and bake at 350° for 14-16 minutes or until lightly browned. Stir occasionally while baking. Cool on a wire rack.


Crumble the baked pecan mixture; set aside 1/2 cup for topping. Sprinkle the remaining mixture into an 13 X 9 pan.


In a large bowl, beat the strawberries, sugar and lemon juice until blended. Fold in whipped cream. Spread evenly into dish. Sprinkle with reserved pecan mixture. Cover and freeze for 8 hours or overnight.
Yes, it is really that simple! To be honest though, I always double the crust because we like the pieces that are sprinkled on top that seep down into the dessert.
Trust me, it is just better. Also, the only other hitch in the dessert I highlighted.
(Make sure you whip the whipping cream before you FOLD it into the strawberry mixture. By doing this it is unbelievably light and fluffy.)
FYI: There will be no leftovers on this dessert!
